Chocolate cupcakes and peanut butter icing

I love chocolate cake!! This is my favorite recipe ever!! I use it over and over. Then I found Peanut Butter Frosting... and it was a match made in heaven!


You will need:
2 cups of sugar
1 3/4 cups of flour
3/4 cup cocoa
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1 tsp salt
2 eggs
1 cup milk
1/2 cup vegetable oil
2 tsp vanilla
1 cup boiling water

1. preheat oven at 350
2. stir together sugar, flour, cocoa, baking powder, baking soda and salt. add eggs, milk, oil and vanilla. beat on high for 2 mins. stir in boiling water... it will be very thing.. dont worry! then poor into pans
3. bake for 30-35 mins.


Perfect Chocolate Icing
1/2 cup butter
2/3 cup cocoa
3 cups icing sugar
1/3 cup milk
1 tsp vanilla

melt butter. stir in coca. alternately add icing sugar and milk. and vanilla



Peanut Butter Icing
1/2 cup butter or margine
3/4 cup peanut butter
2 cups icing sugar
2 tblsp milk
1 tsp vanilla


cream together butter and peanut butter. then add icing sugar slowly. then add milk and vanilla. I put mine in my kitchen aid mixer and let it mix for like 20 mins and it was amazing!

Slow Cooker BBQ Chicken and Loaded Potatoes

I would love to thank the over 75 people who checked out my blog post the other day! I hope you all made the recipe and enjoyed it! Heres what we are having tonight at my house....

Slow Cooker BBQ Chicken 

  1. 10-12 Chicken Drumsticks
  2. 1 1/2 cups purchased barbecue sauce
  3. 1/4 cup honey
  4. 2 teaspoons yellow mustard
  5. 1 1/2 teaspoons Worcestershire sauce
  1. Preheat broiler.
  2. Rinse chicken and place on a baking sheet.
  3. Place chicken on the middle rack of the oven.
  4. Broil 4 to 5 inches from the heat (I used the middle rack) for 15 to 20 minutes or until chicken is light brown, turning once halfway through broiling.
  5. In a medium bowl, combine barbecue sauce, honey, mustard and Worcestershire sauce.
  6. Layer a small amount of sauce in the bottom of the slow cooker. Place the chicken on top and pour the sauce over the chicken.
  7. Cover and cook on low for 3 to 4 hours or on high for 1 and 1/2 to 2 hours.



LOADED BAKED POTATOES


8 medium potatoes
1/2 cup sour cream
1 teaspoon salt
1/2 teaspoon ground black pepper
2 cups  shredded cheddar cheese, divided
6 slices bacon, cooked and crumbled, divided
Sliced green onions (optional)
PLACE potatoes in large saucepan. Cover with water; bring to a boil. Cook over medium-high heat for 15 to 20 minutes or until tender; drain.
PREHEAT oven to 350° F. Grease 2 1/2- to 3-quart casserole dish.
RETURN potatoes to saucepan, sour cream, salt and pepper. Beat with hand-held mixer until smooth. Stir in 1 1/2 cups cheese and half of bacon. Spoon mixture into prepared casserole dish.
BAKE for 20 to 25 minutes or until heated through. Top with remaining 1/2 cup cheese, remaining bacon and green onions. Bake for an additional 3 minutes or until cheese is melted.

Chicken, Broccoli, Mushroom Fettuccine Alfredo Casserole

I love Casseroles. I love the fact that I can throw everything in a dish and it all cooks together.


you will need:
2-3 chicken breasts (or pre cooked chicken strips)
1 bottle of Alfredo sauce
1 can of mushrooms
2 cups of frozen broccoli
2 cups of shredded cheese
1/2 box of Fettuccine


Directions:
first cook the chicken and the fettuccine. While those are cooking in a bowl mix mushrooms, broccoli and chicken together. Once the pasta  and chicken are cooked (cut up chicken) . In a 9x9 pan mix it all together and top with cheese. Bake at 350 for about 20 mins or until cheese is bubbly and brown.  Enjoy!

Butter Tart Squares

I love butter tarts.... and this recipe is so easy and simple.... I made them in no time!



1/2 C. butter
2 Tbsp powdered sugar
1 1/2 C. flour
1 1/2 C. brown sugar
2 eggs
1 Tbsp vinegar
1 tsp vanilla
1/4 C. melted butter

DIRECTIONS

Cream 1/2 C. butter and powdered sugar. Blend in flour. Press mixture into a 9x9 inch pan. Bake at 350 degrees for 5 minutes. Remove from oven. Combine the remaining ingredients and pour over base. Optional: add raisins or chopped pecans. Bake at 350 degrees for 30 minutes or until set.

Crispy Cheddar Chicken

I made this tonight for supper.. it was sooo good!! Its definitely going to be  a regular at my house!




Chicken:
4 chicken breasts
1/2 box of ritz crackers crushed
1/4 t salt
1/4 t pepper
1/2 cup milk
3 cups grated cheddar cheese




sauce:
1 can cream of chicken soup
2 tablespoons of sour cream
2 tablespoons of butter


Directions
1. poor the milk cheese and cracker crumbs into 3 small containers. toss the salt and pepper in the cracker crumbs and stir the mixer.
2. dip each piece of chicken into the milk then the cheese and then the cracker crumbs
3. spray a pan with cooking spray and lay each piece into the pan
4. sprinkle the top with left over cheese
5. cover the pan with foil and bake for 400 degrees for 35 mns.
6. in a medium sauce pan combine soup, sour cream and butter with  a whisk. stir over medium heat until nice and hot.
7. serve over chicken

easy chicken parmesan


Ingredients:
1 box (8 slices) Garlic Texas Toast
1 jar of pizza sauce
8 fried chicken strips already cooked (or about 10 fried chicken nuggets)
1 cup shredded mozzarella cheese

Directions
Preheat oven to 400F degrees.
Arrange garlic bread (butter side up) on a baking sheet lined with aluminum foil.

Bake frozen garlic toast for about 3-4 minutes until bread is no longer frozen and just starting to brown on the edges.  If using a full loaf of garlic bread you'll want to cook it for about 8-9 minutes.

While, the bread is toasting, start dicing up your chicken.
Cut them up into 1/2-inch pieces.

then place 1-2 chicken strips on garlic bread. then put one tablespoon of sauce on top

Bake for about 6-8 minutes just to get that chicken warmed back up.
Then take out and top each slice with some shredded mozzarella.

And pop it back into the oven for another 3-4 minutes just until cheese is melted and bubbly.

Jumbo 3 chip cookies



  • 4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 1/2 cups (3 sticks) butter, softened
  • 1 1/4 cups granulated sugar
  • 1 1/4 cups packed brown sugar
  • 2 large eggs
  • 1 tablespoon vanilla extact
  • 1 cup milk chocolate chips
  • 1 cup semi sweet chips
  • 1/2 cup  white chips
  • 1 cup chopped nuts
Directions:
PREHEAT oven to 375° F.

Comdine flour, baking soda, baking powder in a medium bowl. beat butter and sugars in a large mixing bowl. mix until creamy. beat in eggs and vanilla. gradually add flour mixture to mixture. then stir in chocolate chips and nits. drop dough by level 1/4 cup measure. 

bake for 12 to 14 mins. let cool on baking sheet for 2 mins then remove to wire rack.

Easy Blueberry Muffins



You will need:
For Muffin:
1 box of yellow or white cake mix (ignore the ingrediants and the directions on the back of the box)
2 cups of blueberries
1 teaspoon baking powder
2 tablespoons flour
2/3 cup milk
1/3 cup vegetable oil
3 eggs

Topping:
1/2 cup sugar
1/3 cup flour
1/4 cup butter
1 1/2 teaspoon cinnamon

Directions:
In a mediumm bowl mix together cake mix, baking powder, and flour. Stir in milk. oil and eggs until well incormporated. Carefully mix in blueberries  Fill lined muffin cups 2/3 full with batter. the top it off with the topping.
These rise significantly so you could get away with 1/2 full.

Bake at 375 for 15 mins.
