Blueberry Pie Bars



you will need:
1 roll of refrigerated sugar cookies
1/2 cup quick cooking oats
1/4 cup brown sugar
1/4 teaspoon ground cinnamon
1/2 cup white sugar
4 teaspoons of cornstarch
juice of 1 lemon
4 cups of blueberries


Instructions:
heat oven at 375. spray a 9 inch square baking pan with cooking spray. break up 3/4th of cookie dough into pan. with floured fingers press dough into bottom of pan to form a crust. bake for 15-20 mins
2.meanwhile in a medium bowl crumble remaining dough. add oats, brown sugar and cinnamon. toss and set a side.
3. in a small bowl stir together sugar, cornstarch and lemon juice. gently stir in blueberries. sprinkle blueberry mixture evenly over crust. crumble oat mixture over blueberry mixture
4. bake for 30-40 mins or until topping is golden brown. cool 1 hr before serving
5. cut into squares and serve! 

Easy Taco Dip



Ingredients
  • 1 (16 oz) container low-fat sour cream
  • 1 (8 oz) cream cheese, softened
  • 1 (1.25 oz) envelope taco seasoning
  • 1 c. salsa
  • 1 c. Taco Cheese
  • 3 c. shredded lettuce
  • 1 c. cherry tomatoes, halved
  • 1 (2.25 oz) sliced black olives
Instructions
  1. Combine sour cream, cream cheese and taco seasoning in a medium bowl until smooth. Spread on 9x13 in pan. Cover mixture with salsa. Then sprinkle cheese, lettuce, tomatoes and black olives on top. Refrigerate until serving. Serve with chips

you can: not add black olives because I didnt lol and I added ground beef to it! but its up to you

Skillet Spaghetti



  • 1 lb ground beef
  • 3 c. water
  • 2 3/4 c. tomato sauce
  • 1 (6 oz) can tomato paste
  • 2 Tbsp dried minced onion
  • 2 Tbsp chili ppowder
  • 1 1/2 tsp oregano
  • 1 tsp salt
  • 1 tsp sugar
  • 1 tsp garlic salt
  • 1 (7 oz) package spaghetti
  • 1/2 c. Parmesan cheese

  1. In a skillet, cook ground beef until no longer pink. Drain greased off of hamburger.
  2. Add water, juice, tomato paste and seasonings and bring to a boil.
  3. Reduce heat and add spaghetti. Cover and simmer on low heat for 30 minutes, stirring frequently or until spaghetti is cooked through. Sprinkle with Parmesan cheese and serve.

Chocolate Cake with Fluffy Brown Sugar Icing





For the Cake:
You will need:
2 cups of sugar
1 3/4 cups of flour
3/4 cup cocoa
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1 tsp salt
2 eggs
1 cup milk
1/2 cup vegetable oil
2 tsp vanilla
1 cup boiling water

1. preheat oven at 350
2. stir together sugar, flour, cocoa, baking powder, baking soda and salt. add eggs, milk, oil and vanilla. beat on high for 2 mins. stir in boiling water... it will be very thin.. dont worry! then poor into pans
3. bake for 30-35 mins.


For the Icing:

1 cup brown sugar (packed)
¼ cup water
½ cup corn syrup
4 egg whites*
2 tsp vanilla

Mix brown sugar, water and corn syrup in a medium saucepan. Bring to a full rolling boil. (Be careful, as it will rise, so make sure the sides of your pan are taller). Let it boil at medium to medium high until the syrup drops like a hair from spoon (approximately 10 minutes). Remove from burner and set aside.
Meanwhile, beat egg whites until stiff.
SLOWLY pour the hot syrup in a THIN stream into egg whites, beating constantly. Beat until icing holds peaks, then blend in vanilla.
Let cool to room temp, then store covered in the fridge until ready to use.

Pizza Burgers



1 medium onion, chopped
Drizzle of canola/vegetable/olive oil
1 lb lean ground beef
1 can tomato soup
1/4 cup (or so) water
1 tablespoon (or so--give or take your taste) pizza or Italian seasoning
4 English muffins, split into 8
3 tablespoons (or so) butter
1 tablespoon garlic salt
32 pepperoni slices
2 cups mozzarella cheese

Start by adding the onions and a drizzle of oil in a large skillet on medium high heat.  Heat through.  Add the ground beef and cook all the way through.  Once the meat is cooked, add the tomato soup, water and pizza seasoning.  Reduce to low and let simmer. 

While the meat and sauce are simmering, preheat the oven on broil and spread the butter evenly on each
English muffin half.  Sprinkle with garlic salt and top each with 4 slices of pepperoni.  Pop these under the broiler on a cookie sheet for about 2 minutes or until they begin to brown just on the edges. 

Take out of the oven and top each English muffin with about 1/4 cup of the meat and sauce mixture.  Top each of those with the cheese.  Place back under the broiler for another 2-3 minutes or until the cheese turns golden brown and bubbly.

Applesauce Muffuns




1 cup softened butter, divided
1 1/2 cups sugar, divided
1 egg
1 teaspoon vanilla
1 cup  applesauce
2 cups flour
1/2 teaspoon baking soda
1 1/2 teaspoons ground cinnamon, divided

DIRECTIONS:

Preheat oven to 350 degrees. Spray a mini muffin tin with non-stick cooking spray.
In the bowl of a stand mixer, beat together 1/2 cup of butter and 1 cup of sugar until light and fluffy. Beat in the egg, vanilla, and applesauce until well combined.
Gradually stir in the flour, baking soda, and 1/2 teaspoon of cinnamon.
Fill the muffin wells 2/3 full. Bake for 20 minutes or until a toothpick inserted in the center of a muffin comes out clean.
Let cool for 10 minutes before carefully removing the muffins from the tin.
Melt the remaining 1/2 cup of butter. Place in a small bowl.
Stir together the remaining 1/2 cup of sugar and teaspoon of cinnamon and place in a second small bowl.
Dunk each muffin in the butter and then roll in the cinnamon sugar mixture to coat.

easy brown sugar pork chops



Ingredients
  • 4 pork chops
  • 1 Tbsp soy sauce
  • 2 Tbsp ketchup
  • 2 Tbsp brown sugar
  • 1 Tbsp Worcestershire sauce
  • 1 tsp. lemon juice
Instructions
  1. Combine soy sauce, ketchup, brown sugar, Worcestershire sauce, and lemon juice in a medium bowl.
  2. Place pork chops on a lightly greased cookie sheet. Spoon half the sauce over the pork chops.
  3. For half-inch pork chops like seen above, bake at 350° for 15 minutes. Turn pork chops over, add remaining sauce, and bake for 15 more minutes. Bake 30 minutes on each side, if pork chops are thick.
