Slow Cooker BBQ Chicken and Loaded Potatoes

I would love to thank the over 75 people who checked out my blog post the other day! I hope you all made the recipe and enjoyed it! Heres what we are having tonight at my house....

Slow Cooker BBQ Chicken 

  1. 10-12 Chicken Drumsticks
  2. 1 1/2 cups purchased barbecue sauce
  3. 1/4 cup honey
  4. 2 teaspoons yellow mustard
  5. 1 1/2 teaspoons Worcestershire sauce
  1. Preheat broiler.
  2. Rinse chicken and place on a baking sheet.
  3. Place chicken on the middle rack of the oven.
  4. Broil 4 to 5 inches from the heat (I used the middle rack) for 15 to 20 minutes or until chicken is light brown, turning once halfway through broiling.
  5. In a medium bowl, combine barbecue sauce, honey, mustard and Worcestershire sauce.
  6. Layer a small amount of sauce in the bottom of the slow cooker. Place the chicken on top and pour the sauce over the chicken.
  7. Cover and cook on low for 3 to 4 hours or on high for 1 and 1/2 to 2 hours.



LOADED BAKED POTATOES


8 medium potatoes
1/2 cup sour cream
1 teaspoon salt
1/2 teaspoon ground black pepper
2 cups  shredded cheddar cheese, divided
6 slices bacon, cooked and crumbled, divided
Sliced green onions (optional)
PLACE potatoes in large saucepan. Cover with water; bring to a boil. Cook over medium-high heat for 15 to 20 minutes or until tender; drain.
PREHEAT oven to 350° F. Grease 2 1/2- to 3-quart casserole dish.
RETURN potatoes to saucepan, sour cream, salt and pepper. Beat with hand-held mixer until smooth. Stir in 1 1/2 cups cheese and half of bacon. Spoon mixture into prepared casserole dish.
BAKE for 20 to 25 minutes or until heated through. Top with remaining 1/2 cup cheese, remaining bacon and green onions. Bake for an additional 3 minutes or until cheese is melted.
